My grandmother brought over some banana muffins she'd baked herself, and I learned that failing to properly mix in the salt and baking soda results in the end product tasting incredibly salty and bitter. According to her, the recipe said "Do not overmix" in all caps, but I don't think the author meant you shouldn't mix the ingredients...

My grandmother and I baked a three-layer chocolate cake today—my first time ever making a cake and frosting from scratch.



It didn't turn out too even, but it was delicious.

Now that I finally have access to cocoa powder, I tried making another chocolate mug cake. It was a success.

It was a vanilla cake this time. It came out okay texture-wise, but ended up tasting rather strongly of coconut because the recipe called for coconut oil, and I hate coconut. Olive oil was the only other kind we had, though, and I doubt that would have worked any better.

The lemon-poppyseed cake was a little too buttery and not lemony enough. The chocolate-chip-cookie-in-a-mug was on the dry side, but that wasn't the worst part. I used dark chocolate chips because that was the only kind we had, and it didn't work. Dark chocolate is fine on its own and does a nice job of balancing out extra-sweet things like caramel, but it's not meant to replace milk chocolate.

The snickerdoodle cake tasted precisely as it should. Trouble is, I'm not overly fond of cinnamon.

I tried making mug cakes for the first time, one for myself and a gluten-free one for my little brother. They were very moist, probably because the recipe called for just as much oil as flour, which I assume was because it didn't include any eggs.

The good news is that they were delicious. The bad news is that I'm now experiencing a sugar crash. I probably shouldn't have used hot chocolate in lieu of regular cocoa powder, even though I reduced the amount of sugar.

Overall, though, I'd call it a successful first attempt.
